- 1 cup Yogurt full-fat greek yogurt works best; alternatively, and letting it drain in the refrigerator for 2-3 hours., pouring in plain yogurt, you can make your own hung curd by lining a fine-mesh sieve with cheesecloth
For the Shrikhand
- 2 tbsp Sugar powdered
- 1 cup Mango Pulp use ripe, sweet mangoes. alternatively, you can substitute with high quality canned mango puree.
- 1/2 cup Mango Chunks fresh, ripe mango chunks for garnish; adjust to your preference.
- 1/4 tsp Cardamom Powder optional, for added warmth and aroma.
Instructions
Prepare the Hung Curd (if not using Greek Yogurt)
- Line a fine-mesh sieve with cheesecloth and place it over a bowl. Pour in 1 cup of plain yogurt and let it drain in the refrigerator for 2-3 hours, or until most of the whey has separated.
Make the Shrikhand
- In a medium bowl, whisk the drained hung curd (or Greek yogurt) until smooth and creamy.
- Add the powdered sugar and whisk until well combined.
- Gently fold in the mango pulp and cardamom powder (if using), ensuring not to overmix.
- Stir in half a cup of mango chunks, reserving the other half for garnish.
