Ingredients
Pasta & Grains
- 1 cup Ditalini Pasta or any small pasta shape; you can also use ditalini or other small pasta shapes.
- 1 cup Corn kernels, sweet
Vegetables
- 1 Bell Peppers chopped, red
- 1 Bell Peppers chopped, yellow
- 1 Bell Peppers capsicum, chopped, green
- 1 Onion chopped; optional, medium
- 1 cup Broccoli florets
Protein & Legumes
Seasoning & Dressing
- 1 tbsp Olive Oil plus extra for drizzling
- 1 tbsp Curry Powder
- 1/2 tbsp Oregano dried
- 1/4 tbsp Pepper Flakes red
- 1/2 tbsp Pepper black, freshly ground, ground
- 1.5 tsp Salt or to taste
- 1 Lemon juiced
Instructions
Prepare the Vegetables and Tofu
- Chop the bell peppers and onion into bite-sized pieces. Cube the tofu into large chunks.
Cook the Pasta and Vegetables
- Bring a pot of salted water to a boil. Add the ditalini pasta and cook according to package directions until al dente. Drain and set aside. In a separate pot, blanch the broccoli florets and corn kernels for about 5 minutes until tender-crisp. Drain and rinse with cold water.
Sauté the Vegetables
- Heat the olive oil in a large pan over medium heat. Add the chopped peppers and onion and sauté for about 2 minutes until slightly softened.
Combine the Salad Ingredients
- Add the curry powder to the pan and cook for another minute. Stir in the cooked pasta, chickpeas, broccoli, corn, and tofu. Sauté for 2 minutes, then remove from heat.
Dress and Chill
- Transfer the salad to a large bowl. Sprinkle with oregano, red pepper flakes, ground black pepper, and salt. Squeeze the lemon juice over the salad and toss gently to combine. Drizzle with additional olive oil.
Refrigerate and Serve
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled with your choice of bread or juice.
