Ingredients

Protein
- 100 gm Tofu cubed; can substitute with 100g paneer, firm or extra-firm tofu
Seasoning & Dressing
- Salt to taste
- 1/4 tsp Pepper black, freshly ground, preferred
- 1 tbsp Lemon Juice freshly squeezed, recommended
- 1 tbsp Olive Oil for shallow frying the tofu/paneer
Instructions
Prepare the Ingredients
- Blanch the mushrooms in boiling water for 2-3 minutes. Drain and set aside.
- Blanch the spinach in boiling water for 1 minute. Drain and set aside.
- Heat olive oil in a pan over medium heat. Shallow fry the tofu or paneer cubes until lightly golden brown.
Assemble the Salad
- In a large bowl, combine the blanched mushrooms, spinach, carrots, and mint leaves.
- Add the fried tofu or paneer.
Dress and Serve
- Drizzle with lemon juice and season with salt and pepper to taste.
- Tossed gently to coat everything evenly. Serve immediately and enjoy!
