Ingredients
Salad Ingredients
- 2 Cucumbers

- 1 Onion red, small, thinly sliced
- 1 tbsp Spring Onion Greens chopped, for garnish
- 2 tbsp Peanuts chopped, roasted
Dressing Ingredients
- 2 tsp Sugar
- 4-5 tsp Water
- 5 tsp Chili Sauce sweet
- 1 tsp Apple Cider Vinegar
Instructions
- Peel the cucumbers and cut them into bite-sized pieces.
- Place the cucumber pieces in a bowl. Sprinkle with salt. Toss gently to combine. This helps draw out excess moisture and enhances the flavor. Refrigerate for 10-15 minutes.
- While the cucumbers chill, prepare the dressing. In a small saucepan, combine the sugar, water, sweet chili sauce, and apple cider vinegar.
- Heat the dressing over medium heat for 3-5 minutes, stirring occasionally, until it slightly thickens. Remove from heat and let it cool completely.
- Remove the cucumbers from the refrigerator and drain any released water.
- Add the sliced red onion to the cucumbers. Pour the cooled dressing over the cucumbers and onions. Toss gently to coat evenly.
