  • Peel the cucumbers and cut them into bite-sized pieces.
  • Place the cucumber pieces in a bowl. Sprinkle with salt. Toss gently to combine. This helps draw out excess moisture and enhances the flavor. Refrigerate for 10-15 minutes.
  • While the cucumbers chill, prepare the dressing. In a small saucepan, combine the sugar, water, sweet chili sauce, and apple cider vinegar.
  • Heat the dressing over medium heat for 3-5 minutes, stirring occasionally, until it slightly thickens. Remove from heat and let it cool completely.
  • Remove the cucumbers from the refrigerator and drain any released water.
