- 4 tbsp Sugar

Reduce the Milk
- Pour the milk into a heavy-bottomed saucepan. Add a pinch of salt. Heat over medium heat, stirring occasionally, until the milk is reduced by half – approximately 500ml. This process will take about 20-30 minutes. Stir frequently to prevent burning.
Combine and Simmer
- Add the paan masala paste to the reduced milk. Stir well to combine. Bring to a gentle simmer for 2 minutes. Remove from heat and let it cool completely.
Freeze the Ice Cream
- Once completely cool, transfer the mixture to an airtight container suitable for freezing. Cover tightly and freeze for at least 8 hours, or preferably overnight, until solid. Stir the mixture halfway through the freezing process for a smoother texture (approximately 4 hours in).
