Instructions

Prepare the Paan Masala Paste

  • Combine betel leaves, almonds, cardamom pods, fennel seeds, sugar, and gulkand in a food processor or blender. Blend until a smooth paste forms. Set aside.

Reduce the Milk

  • Pour the milk into a heavy-bottomed saucepan. Add a pinch of salt. Heat over medium heat, stirring occasionally, until the milk is reduced by half – approximately 500ml. This process will take about 20-30 minutes. Stir frequently to prevent burning.

Combine and Simmer

  • Add the paan masala paste to the reduced milk. Stir well to combine. Bring to a gentle simmer for 2 minutes. Remove from heat and let it cool completely.

Freeze the Ice Cream

  • Once completely cool, transfer the mixture to an airtight container suitable for freezing. Cover tightly and freeze for at least 8 hours, or preferably overnight, until solid. Stir the mixture halfway through the freezing process for a smoother texture (approximately 4 hours in).

Serve and Enjoy

  • Scoop the Paan Masala ice cream into bowls and serve immediately. Garnish with chopped pistachios or a sprinkle of rose petals for an elegant touch.

Recipe Notes

Expert Tips for the Best Paan Masala Ice Cream

  • For a smoother ice cream, strain the mixture through a fine-mesh sieve after simmering to remove any fibrous bits from the paan leaves.
  • Adjust the amount of sugar according to your preference. Taste the mixture before freezing and add more if needed.
  • If you don't have gulkand, you can substitute it with a teaspoon of rose water or a few drops of rose extract for a similar floral aroma.
  • For a richer, more intense flavor, let the paan masala paste sit for 30 minutes before adding it to the milk. This will allow the flavors to meld.
