Ingredients
 

Pearl Millet Porridge

  • 1/2 cup Pearl Millet kambu, use whole pearl millet for best results.
  • 2 cup Water
  • 1/2 tsp Salt adjust to taste.

Buttermilk Mixture

  • 2 cup Buttermilk alternatively, use 2 cups of plain yogurt blended until smooth.

Prepare the Pearl Millet

  • Rinse the pearl millet under cold water until the water runs clear. Combine the rinsed pearl millet with 2 cups of water in a saucepan. Bring to a boil over medium heat, then reduce heat to low, cover, and simmer for approximately 15-20 minutes, or until the millet is tender and the water is absorbed.
  • Stir frequently to prevent sticking. Add salt and stir well.

Cool and Combine

  • Remove the cooked millet from the heat and let it cool completely. Once cooled, stir in the buttermilk until well combined and smooth.

Make the Tempering

  • Heat the vegetable oil in a small pan over medium heat. Add the mustard seeds and let them splutter. Add the curry leaves, green chilies, and shallots. Sauté for a minute until fragrant.

Serve

  • Pour the Kamban Koozh into serving bowls. Drizzle the tempering over the porridge and garnish with fresh cilantro. Serve immediately and enjoy!
