Ingredients
Pearl Millet Porridge
- 1/2 cup Pearl Millet kambu, use whole pearl millet for best results.
- 2 cup Water
- 1/2 tsp Salt adjust to taste.
Buttermilk Mixture
- 2 cup Buttermilk alternatively, use 2 cups of plain yogurt blended until smooth.
Tempering (Tadka)
- 1 tbsp Vegetable Oil
- 1/2 tsp Mustard Seeds also known as rai.
- 5-6 Curry Leaves
- 2 Chilies finely chopped. adjust quantity to your spice preference., green
- 2 tbsp Shallots finely chopped.
- 1 tbsp Coriander finely chopped, for garnish.
Instructions
Prepare the Pearl Millet
- Rinse the pearl millet under cold water until the water runs clear. Combine the rinsed pearl millet with 2 cups of water in a saucepan. Bring to a boil over medium heat, then reduce heat to low, cover, and simmer for approximately 15-20 minutes, or until the millet is tender and the water is absorbed.
- Stir frequently to prevent sticking. Add salt and stir well.
Cool and Combine
- Remove the cooked millet from the heat and let it cool completely. Once cooled, stir in the buttermilk until well combined and smooth.
Make the Tempering
- Heat the vegetable oil in a small pan over medium heat. Add the mustard seeds and let them splutter. Add the curry leaves, green chilies, and shallots. Sauté for a minute until fragrant.
Serve
- Pour the Kamban Koozh into serving bowls. Drizzle the tempering over the porridge and garnish with fresh cilantro. Serve immediately and enjoy!
