Make the Hibiscus Syrup

  • Combine hibiscus flowers, ginger, sugar, cinnamon stick, and 1 cup of water in a saucepan. Bring to a boil, then reduce heat and simmer for 10 minutes.
  • Turn off the heat, cover, and let steep for 30 minutes.
  • Strain the syrup through a fine-mesh sieve and let cool completely.

Assemble the Sangria

  • In a large pitcher, combine the cooled hibiscus syrup, kinnow juice, and lime juice.
  • Stir well and taste. Adjust sweetness or tartness as needed.
  • Add the sliced green grapes, black grapes, strawberries, orange slices, and mint leaves.
  • If using, add the gondhoraj lebu slices.
  • Refrigerate for at least 2 hours to allow the flavors to meld and the sangria to chill thoroughly.
  • Serve over ice in glasses, garnished with extra fruit and mint sprigs.
