Instructions

  • Cut the watermelon into cubes. Freeze for at least 4 hours or preferably overnight. This allows for a frosty, slushy consistency.

  • Wash the fresh mint leaves. Set aside a few larger leaves for garnishing.
  • Juice the lime and remove any seeds.
  • In a blender, combine the lime juice, honey, mint leaves, and 1/4 of the frozen watermelon cubes.
  • Blend until smooth. This initial blend helps incorporate the flavors evenly.
  • Add the remaining frozen watermelon cubes to the blender.
  • Blend again until the mixture is completely smooth and slushy.
  • Add salt, chaat masala (if using), and cold water to the blender.
  • Blend for a final time to combine all ingredients thoroughly.
  • Pour the watermelon mojito mocktail into glasses. Garnish with fresh mint leaves and watermelon cubes. Serve immediately and enjoy!

Recipe Notes

Good To Know

  • For a slushy and extra-chilled mojito, freeze watermelon cubes ahead of time and use them in place of ice when blending. This keeps the drink cold without watering it down.
  • If you prefer a fizzier texture, replace half of the cold water with chilled sparkling water or club soda just before serving.
  • To elevate presentation, rim your serving glasses with a mix of salt and chili powder or black salt for a tangy twist.
  • For a vegan version, substitute honey with agave syrup or maple syrup, adjusting the quantity to your preferred sweetness.

Expert Tips

  • Muddle the mint leaves gently to release their flavor without bruising them, which can make the drink bitter.
  • Adjust the sweetness and tartness to your liking by adding more or less honey/syrup and lime juice, respectively.
  • For a richer flavor, use white rum aged in oak barrels.

Storage Instructions

  • Watermelon mojitos are best enjoyed fresh. If you have leftovers, store them in the refrigerator for up to 24 hours. The flavor and texture may change slightly over time.
