Ingredients
- 1/2 cup Cranberries dried
- 1/2 cup Tutti Frutti tutti fruity
- 1/4 cup Dates de seeded chopped
- 1/4 cup Figs chopped dried
- 1/4 cup Almonds chopped
- 1/4 cup Apricots chopped
- 1/4 cup Cashews chopped
- 1 cup Orange Juice or apple fresh apple juice
- 1 tsp Orange Zest
- 1 cup Whole Wheat Flour whole
- cup Cane Sugar 3/4 raw
- 1/2 cup Butter
- 1/2 tsp Cinnamon
- 1/4 tsp Nutmeg grated
- 1/4 tsp Salt or as per taste
- 3/4 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1 tbsp Cocoa Powder
- 1 tbsp Vinegar
- 3/4 cup Milk
- 1/2 cup Water hot
Instructions
Prepare the Fruits
- Soak all dried fruits and nuts in orange juice and zest. Microwave for 1 minute, then cover and let stand for at least 1 hour.
Combine Wet Ingredients
- In a mixing bowl, cream together butter and raw cane sugar. Pour hot water over the mixture and let it sit for a few minutes to melt the sugar and butter.
Make Buttermilk
- In a separate bowl, whisk together milk and vinegar. Let stand for a few minutes to curdle slightly – this creates a buttermilk substitute.
Preheat Oven & Combine Wet and Dry Ingredients
- Preheat oven to 350°F (180°C). Add the buttermilk mixture to the butter and sugar mixture.
Add Dry Ingredients and Fruits
- In a separate bowl, whisk together the flour, cocoa powder, cinnamon, nutmeg, salt, baking powder, and baking soda. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Gently fold in the soaked fruits and nuts.
