Ragi Choco Coffee Mug Cake

Filter coffee is common in many of our households. We generally prefer the first or second degree coffee and most of the time third degree coffee is never prepared and this mild flavor decoction is wasted in many households.
Today's recipe is with this third degree decoction.
Ragi, wheat flour, 3rd degree coffee decoction, palm sugar, cocoa & other baking ingredients are mixed and poured into a clay pot cup. The mix is then kept in microwave for a minute to get this fluffy Ragi Choco coffee Mug cake.

Ingredients
  

  • 3 tbsp Degree Coffee Decoction
  • 1 tbsp Milk
  • 2 tbsp Ragi Flour
  • 1 tbsp Wheat flour
  • 1 tbsp Cocoa powder
  • 1 tbsp Ghee
  • 2 tbsp Palm Sugar
  • ¼ teaspoon Salt
  • 1/4th teaspoon Baking soda
  • 1/4th teaspoon Baking powder
  • ¾ teaspoon Apple Cider Vinegar
  • 2 tbsp Choco chips

  • Prepare the filter coffee in the regular way by adding 5 scoops of filter coffee and less than ½ cup boiling water. Once the decoction is brewed, use them as first degree coffee. Repeat the same process to get the second & third degree decoction

  • Take 3 tbsp of decoction & mix it with 1 tbsp milk. Keep it aside

  • Add ragi flour, wheat flour, palm sugar in a bowl and mix them well. Add Ghee to this and mix well again
  • Add baking soda, baking powder and apple cider vinegar. Just mix them for a second. Add the coffee mix and mix well.
  • Add the cocoa powder. This can be added along with the dry ingredients also. Mix all of them without any lumps. Add 1 tbsp of Choco chips and give it a mix
  • Transfer them to a clay pot mug or regular microwave mug. Sprinkle the remaining Choco chips. Microwave high for a minute. Make sure the cup is only filled with 3/4th of the mix else they would spill.

Notes

  • Cocoa powder can be added along with other powders also.
  • Do not omit choco chips. This might change the taste as the proportions of sugar and cocoa powder are different without choco chip.
