Ingredients
 

Sweet Potato Preparation

  • 1 large Potato and mashed, boiled, peeled, sweet, sweet potato

Dry Ingredients

  • 1/2 cup Semolina also known as suji, or rava, sooji
  • 1/2 teaspoon Salt or to taste

Frying

  • 2 tablespoons Clarified Butter or clarified butter; homemade ghee recommended
  • 1/4 cup Cottage Cheese for added protein and creaminess, optional
  • Oil Vegetable Oil alternative to ghee, as needed, if preferred.

Instructions
 

Prepare the Sweet Potatoes

  • Mash the boiled and peeled sweet potato until smooth.

Combine Ingredients

  • In a bowl, combine the mashed sweet potato, semolina, cottage cheese (if using), and salt. Mix well until a dough forms.

Shape the Patties

  • Roll the mixture into small balls. Flatten each ball into a patty about 1/2 inch thick.

Cook the Patties

  • Heat the desi ghee or vegetable oil in a non-stick pan over medium heat. Gently place the patties in the hot pan. Cook for 2-3 minutes per side, or until golden brown and heated through. Alternatively, bake the patties on a parchment-lined baking sheet at 375°F (190°C) for about 15-20 minutes, flipping halfway through.
