Ingredients
For the Tempering
- 3 tsp Oil
- 1/2 tsp Mustard Seeds
- 1/2 tsp Gram black
- 2-3 Curry Leaves
For the Dumplings
- 250 gm Semolina about 2 cups, rava/sooji
- 4 cup Water
- 1 tsp Salt or to taste
- 1/4 tsp Asafoetida powder
- 1 tsp Ginger finely chopped
- 3 Chili Pepper finely chopped, green
- 2 Tbsp Carrot finely chopped
- 2 Tbsp Beans finely chopped, green
Instructions
- Heat the oil in a pan over medium heat. Add the mustard seeds and urad dal. Once the mustard seeds splutter and the dal turns golden brown, add the curry leaves. This tempering process infuses the oil with flavor.
- Add the chopped green chilies, ginger, and asafoetida powder to the pan. Sauté for about 30 seconds until fragrant.
- Add the chopped carrots and green beans. Sauté for another minute until slightly softened.
- Reduce the heat to low and add the semolina. Roast the semolina for about 2-3 minutes, stirring constantly, until it becomes lightly fragrant and changes color slightly. This toasting step enhances the nutty flavor of the semolina.
- Carefully pour in the water and add the salt. Stir continuously to prevent lumps from forming.
- Continue to cook and stir until the mixture thickens and the water is absorbed. The semolina should be cooked through and the mixture should pull away from the sides of the pan.
- Transfer the cooked semolina mixture to a plate and let it cool slightly until it's comfortable to handle.
- Lightly grease your palms with oil. Take small portions of the semolina mixture and shape them into smooth, round dumplings.
- Arrange the dumplings on a greased idli steamer plate or in a steamer basket. Steam for 10 minutes until the dumplings are cooked through and fluffy.
- Serve the hot, steamed dumplings immediately as a snack or light meal. They can be enjoyed on their own or with a chutney of your choice.
