Ingredients
For the Idli Batter:
- 2 cup Rice preferably parboiled, raw
- 1 cup Lentils black, split black lentils (also known as udad dal)
- 1/2 cup Fenugreek methi
- 1/2 cup Rice Flakes beaten to break the flakes, poha - 1/2 cup, thick
- 1.5 tsp Salt or to taste
For Serving:
- 2 tbsp Sesame Oil
- Milagai Podi as needed, spicy south indian gunpowder (recipe can be found online)
- Water as needed
Instructions
Prepare the Batter
- Soak the rice, urad dal, fenugreek seeds, and poha in ample water for at least 8 hours, or preferably overnight.
Grind the Batter
- Drain the soaked ingredients and grind them in a wet grinder or a high-speed blender until a smooth, fluffy batter forms. Add water as needed to achieve the right consistency. The batter should be slightly thick.
Ferment the Batter
- Transfer the batter to a large, clean bowl. Add salt and mix well. Cover the bowl and let the batter ferment in a warm place for 8-12 hours, or until it has doubled in volume and is slightly bubbly. Fermentation time may vary depending on the ambient temperature.
Steam the Idlis
- Lightly grease idli molds with oil. Pour the batter into each mold, filling them about three-quarters full. Steam the idlis in a steamer for 15-20 minutes, or until they are cooked through and firm to the touch. Avoid opening the lid during steaming.
Serve
- Carefully remove the idlis from the molds. Serve hot with milagai podi (gunpowder) and a drizzle of sesame oil.
