Ingredients
For the Paneer Filling
- 200g gm Cottage Cheese cubed, indian cottage cheese
- 1/2 cup Bell Peppers capsicum, roughly chopped
- 1 Onion medium, thinly sliced
- 1/2 cup Tomato diced
- 1/2 tbsp Chili Powder red
- 1/2 tbsp Garam Masala
- 1/2 tbsp Turmeric Powder haldi
- 1 tbsp Fenugreek Leaves dried, kasuri methi
- 1 tbsp Yogurt
- 1 tbsp Olive Oil
- 1.5 tsp Salt or to taste
For the Toasties
- 2 slices Wheat Bread whole
- 1 tbsp Oregano dried
- 1 tbsp Sesame Seeds for garnish (optional), toasted
Instructions
Prepare the Paneer Filling
- Heat olive oil in a grill pan. Add onion, bell pepper, and paneer. Grill until lightly browned.
- Transfer the grilled vegetables and paneer to a separate pan. Add red chili powder, turmeric powder, garam masala, and salt. Sauté briefly.
- Stir in the yogurt and dried fenugreek leaves. Cook until slightly thickened.
Assemble the Toasties
- Toast the whole wheat bread lightly. Sprinkle with dried oregano.
- Spread the paneer mixture evenly over one slice of bread. Top with the other slice of bread.
Grill and Serve
- Grill the toastie in the same pan until golden brown and the cheese is melted and slightly crispy.
- Garnish with toasted sesame seeds (optional) and serve immediately.
