For the Chicken Salad Filling

  • 1 1/2 cup Chicken grilled, cooked, shredded or chopped. leftover rotisserie chicken works perfectly.
  • 1/2 cup Honey Mustard or, substitute with 1/4 cup mayonnaise mixed with 1 tablespoon dijon mustard.
  • 1 Apple granny smith or honeycrisp recommended, cored and finely diced.
  • 0.5 tsp Salt
  • 0.25 tsp Pepper black

For the Sandwich

  • 8 slices Bread your favorite sandwich bread; we used oregano-flavored bread.

Instructions
 

Prepare the Chicken Salad Filling

  • Combine the cooked chicken, honey mustard (or mayo-mustard mixture), diced apple, salt, and pepper in a medium bowl. Mix gently until well combined.

Toast the Bread

  • Lightly toast the bread slices in a grill pan or toaster until lightly golden brown.

Assemble the Sandwich

  • Spread the chicken salad evenly onto four of the bread slices.

Complete the Sandwich

  • Top with the remaining bread slices to create four sandwiches.

Grill the Sandwiches (Optional)

  • Lightly grill the assembled sandwiches in a grill pan or skillet over medium-low heat for 1-2 minutes per side, or until lightly browned and heated through. This step is optional, but adds a nice warmth and texture.
