Instructions

Prepare the Pasta

  • Boil 3 cups of water in a large pot. Add a pinch of salt and 2-3 drops of olive oil. Add the tortellini pasta and cook for 5 minutes less than the package directions.

Sauté the Vegetables

  • While the pasta cooks, heat 2 tablespoons of olive oil in a wok or large skillet over medium heat. Add the chopped onion and bell pepper. Sauté for 3-4 minutes, until slightly softened but still crisp.

Combine and Season

  • Drain the cooked pasta and add it to the wok with the vegetables. Add the Maggi Masala-e-Magic, dried parsley, and white vinegar. Toss to combine.

Add Eggs (Optional)

  • If using, chop the hard-boiled eggs (remove yolks if desired) into small pieces and add them to the pasta mixture. Sauté gently for another minute.

Finish and Serve

  • Season with salt and chili flakes to taste. Garnish with fresh parsley and a drizzle of olive oil. Serve immediately or chill for a later time.

Recipe Notes

Expert Tips

  • For extra flavor, use homemade vegetable stock instead of water to boil the pasta.
  • Add other vegetables like spinach, zucchini, or mushrooms for a more substantial meal.
  • If you don't have Maggi Masala-e-Magic, experiment with other spice blends or create your own using a combination of chili powder, garlic powder, onion powder, and turmeric.
  • To make it a complete protein meal, add cooked chicken or chickpeas.
