Ingredients
Pasta & Sauce
- 1 cup Tortellini pasta
- 2 tbsp Olive Oil extra virgin, plus more for drizzling
- 1 1/2 tbsp Maggi Masala-E-Magic
- 1 tbsp Parsley dried
- 1/2 tbsp Chili Flakes or to taste
- 1 tbsp Vinegar white
- Salt to taste
Vegetables
- 1 Onion medium, roughly chopped
- 1 Bell Peppers capsicum, medium, roughly chopped
- 1/2 cup Corn sweet
Eggs (Optional)
- 2 Eggs hard-boiled
Instructions
Prepare the Pasta
- Boil 3 cups of water in a large pot. Add a pinch of salt and 2-3 drops of olive oil. Add the tortellini pasta and cook for 5 minutes less than the package directions.
Sauté the Vegetables
- While the pasta cooks, heat 2 tablespoons of olive oil in a wok or large skillet over medium heat. Add the chopped onion and bell pepper. Sauté for 3-4 minutes, until slightly softened but still crisp.
Combine and Season
- Drain the cooked pasta and add it to the wok with the vegetables. Add the Maggi Masala-e-Magic, dried parsley, and white vinegar. Toss to combine.
Add Eggs (Optional)
- If using, chop the hard-boiled eggs (remove yolks if desired) into small pieces and add them to the pasta mixture. Sauté gently for another minute.
Finish and Serve
- Season with salt and chili flakes to taste. Garnish with fresh parsley and a drizzle of olive oil. Serve immediately or chill for a later time.
