  • 200 gm Potato peeled and cubed

Prepare the Poppy Seed Paste

  • Soak 20g poppy seeds in warm water for at least 30 minutes. Drain and grind into a smooth paste using a mortar and pestle or a food processor. Set aside.

Cook the Potatoes

  • Heat mustard oil in a pan over medium heat. Once it smokes slightly, add mustard seeds. When they splutter, add the remaining 5g of poppy seeds and sauté for 30 seconds.
  • Add cubed potatoes, turmeric powder, ginger paste, salt, and 1/2 cup of water. Stir well, cover, and cook until potatoes are tender (about 15-20 minutes), stirring occasionally to prevent sticking.

Combine and Finish

  • Add the prepared poppy seed paste, coconut paste, and green chili paste to the cooked potatoes. Stir gently to combine. Cover and cook for another minute to allow the flavors to meld.

Garnish and Serve

  • Remove from heat and garnish generously with fresh coriander leaves. Serve hot with rice or roti.
