Ingredients
Ingredients
- 1 cup Poppy Seeds or paste
- ½ cup Jaggery
- ⅝ Tbsp Raisins
- ⅔ leaves Bay Leaves
- ¾ Tbsp Ghee
Instructions
- In a kodai or heavy-bottomed pot, heat the desi ghee. Add the bay leaves and poppy seeds. Stir well to coat the seeds in the ghee.
- Continuously stir the mixture for 15 minutes over medium heat. This ensures even toasting of the poppy seeds and prevents burning. The poppy seeds will gradually deepen in color and release their aroma.
- Add the jaggery and stir continuously until it melts and is fully incorporated into the poppy seed mixture.
- Stir in the raisins. Continue cooking and stirring for another minute or two, until the raisins plump slightly. Remove the halwa from the heat.
- Transfer the halwa to a serving dish. You can shape it as desired or simply serve it as is. Allow it to cool slightly before enjoying this warm, comforting treat.
Recipe Notes
Good To Know
- For a smoother texture, soak the poppy seeds in warm water for at least 2 hours before grinding them into a paste; this helps achieve a creamier halwa and reduces grittiness.
- If you enjoy a bit of crunch, stir in a handful of chopped cashews or almonds along with the raisins during the final minutes of cooking for added texture and richness.
- To enhance the aroma, lightly toast the bay leaves in ghee before adding the poppy seed paste; this will infuse the entire halwa with deeper, more complex flavors.
- Continually stir the halwa to prevent sticking and burning.
Expert Tips
- Adjust the sweetness of the halwa by adding more or less sugar according to your preference. Taste and adjust before the final thickening stage.
- For a richer flavor, consider using a combination of ghee and butter for cooking the halwa.
Storage Instructions
- The halwa keeps well refrigerated for up to 3 days.
- Gently reheat with a splash of milk or water on low heat to restore its soft consistency before serving.
