For the Pumpkin Spice Chia Pudding

For the Espresso Chia Pudding

  • 1/2 cup Espresso cooled, strongly brewed
  • 6 tbsp Milk almond, dairy, or oat milk, soy
  • 6 tbsp Chia Seeds
  • 4 tbsp Coconut Sugar honey, or maple syrup, or other sweetener to taste

For Serving

  • Optional Toppings berries, chocolate shavings, nuts, seeds, whipped cream

Instructions
 

Prepare the Pumpkin Spice Chia Pudding

  • Combine pumpkin puree, milk, cinnamon, and agave nectar in a bowl. Stir in chia seeds and let it sit for 10 minutes.

Prepare the Espresso Chia Pudding

  • In a separate bowl, combine cooled espresso, milk, and coconut sugar. Stir in chia seeds and let it sit for 10 minutes.

Chill and Combine

  • After 10 minutes, stir both pudding mixtures well to break up any clumps. Refrigerate both mixtures separately for at least 4-5 hours, or preferably overnight.

Assemble the Parfaits

  • In serving glasses or bowls, layer the pumpkin spice chia pudding and espresso chia pudding. Repeat layers as desired.

Add Toppings and Enjoy

  • Top with your favorite toppings (whipped cream, berries, nuts, etc.). Drizzle with extra agave or maple syrup if desired. Enjoy immediately!
