Ingredients
For the Coconut Chia Pudding
- 1 cup Coconut Milk thick
- 1 tbsp Coconut Oil
- 1/4 cup Maple Syrup or honey
- 1 tbsp Cornstarch
- 2 tbsp Chia Seeds
Instructions
Prepare the Black Rice
- Cook black rice with 1/2 cup water and a pinch of salt in a saucepan over medium heat for 35-40 minutes, or until tender. Add more water if necessary.
Make the Coconut Chia Pudding
- Heat coconut milk in a saucepan over low heat. Add coconut oil and maple syrup (or honey). Cook for 4-5 minutes, stirring frequently.
- Whisk in cornstarch until smooth and the mixture thickens. Remove from heat and stir in chia seeds. Let it cool and thicken for at least an hour.
Roast the Oats
- Toast rolled oats in a dry skillet over medium-low heat until lightly browned and fragrant, stirring frequently to prevent burning. Add brown sugar (optional) and mix well.
Assemble the Parfait
- Layer black rice, coconut chia pudding, berries, and roasted oats in individual serving glasses or bowls. Repeat layers as desired.
- Top with slivered almonds and the honey-tossed corn flakes.
