Ingredients
Dry Ingredients
- 1 cup All-Purpose Flour
- 1/2 cup Whole Wheat Flour whole
- 2 tsp Baking Powder
- 2 tsp Pumpkin Pie Spice
- 1/2 tsp Salt
- 4 tbsp Sugar or to taste
Wet Ingredients
- 1/2 cup Pumpkin Puree
- 3/4 cup Milk any milk will work; dairy or non-dairy.
- 2 tbsp Chia Seeds organic
- 1 tsp Apple Cider Vinegar
- 2 tbsp Butter for greasing the pan
Instructions
Prepare the Batter
- Sift together the all-purpose flour, whole wheat flour, baking powder, pumpkin pie spice, and salt in a large bowl. Create a well in the center.
- In a separate bowl, whisk together the pumpkin puree, milk, apple cider vinegar, and sugar.
- Pour the wet ingredients into the well of the dry ingredients and gently whisk until just combined. Do not overmix. If the batter is too thick, add a tablespoon or two of extra milk.
- Let the batter rest for 10-15 minutes to allow the chia seeds to absorb liquid and thicken the batter.
Cook the Pikelets
- Heat a lightly oiled non-stick skillet or griddle over medium-low heat.
- Spoon 2-3 tablespoons of batter onto the hot surface for each pikelet, leaving space between them.
- Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface.
Serve and Enjoy
- Serve the pikelets warm with your favorite toppings, such as maple syrup, butter, fresh fruit, or whipped cream. Enjoy!
Recipe Notes
Expert Tips for Perfect Pikelets
- For extra flavor, use freshly grated nutmeg in addition to the pumpkin pie spice.
- Don't overmix the batter; a few lumps are okay. Overmixing will result in tough pikelets.
- Adjust the amount of sugar to your liking. Some prefer a sweeter pikelet, while others prefer a subtler sweetness.
- If you don't have apple cider vinegar, you can substitute with lemon juice or leave it out altogether.
