Main Ingredients

  • 2 Potatoes large sized; russet or yukon gold recommended
  • 1/2 cup Sugar granulated; adjust to your preference

  • 2 tbsp Ghee clarified butter; desi ghee preferred
  • 1/4 cup Pistachios chopped; or almonds, or a mix of nuts for garnish
  • 1/4 cup Water to help create a smoother consistency if needed

Instructions
 

Prepare the Potatoes

  • Boil the potatoes until tender. Peel and cut them into small, roughly 1/2-inch pieces.

Sauté the Spices

  • Heat the ghee in a pan over medium heat. Add the lightly crushed cardamom pods and sauté for about 30 seconds, or until fragrant.

Add Potatoes and Saffron

  • Add the boiled potatoes to the pan and sauté for 2-3 minutes, stirring gently to coat them in the ghee. Stir in the saffron strands.

Cook the Sheera

  • Add the sugar and stir continuously until the sugar dissolves completely and the sheera begins to thicken and leave the sides of the pan. If the mixture is too thick, add a tablespoon or two of water at a time, stirring until incorporated.

Garnish and Serve

  • Remove from heat and garnish with chopped pistachios (or your preferred nuts). Serve warm or at room temperature.
