Ingredients
Main Ingredients
- 1 cup Whole Wheat Flour atta, medium coarsely ground, whole
- 1 cup Jaggery grated
- 4 tbsp Ghee
- 2 cup Water
Garnish & Flavor
- 1/2 tsp Cardamom Powder
- 7 Cashews chopped
- 10 Almonds chopped
- 10 Pistachios chopped
Instructions
- In a large kadhai or heavy-bottomed pan, heat the ghee over medium heat.
- Add the whole wheat flour to the melted ghee. Roast the flour, stirring constantly to prevent burning.
- Continue roasting until the flour turns light brown and releases a nutty aroma. This step is crucial for developing the rich flavor of the Sheera.
- While the flour is roasting, in a separate saucepan, combine the water and grated jaggery. Bring the mixture to a boil over medium heat, stirring until the jaggery dissolves completely.
- Once the flour is roasted, carefully pour the jaggery syrup into the kadhai. Stir continuously and vigorously to prevent lumps from forming.
- Continue stirring the mixture. The halwa will gradually thicken and start to pull away from the sides of the pan. This indicates that the excess water has evaporated and the Sheera is almost ready.
- Add the chopped cashews, almonds, pistachios, and cardamom powder to the halwa. Mix well to distribute the nuts and spices evenly.
- Serve the Sheera hot, garnished with additional chopped nuts if desired.
Recipe Notes
Good To Know
- You can use milk instead of water and sugar instead of jaggery.
- For deeper flavor and a more pronounced nuttiness, roast the wheat flour on a low flame, stirring continuously until it turns a rich golden brown and releases a toasty aroma.
- If you prefer a smoother texture, sift the wheat flour before roasting.
- To enhance crunch and visual appeal, reserve some fried cashews and almonds to sprinkle on top just before serving. You can also add pistachios or melon seeds.
- For a vegan version, substitute ghee with coconut oil or a neutral plant-based butter.
Expert Tips
- Adjust the amount of sugar or jaggery to your preference, as sweetness levels can vary.
- Don't overcook the halwa, or it may become dry. It should be moist and slightly sticky.
- For a richer flavor, use freshly ground cardamom powder.
Storage Instructions
- Store leftover halwa in an airtight container in the refrigerator for up to 3-4 days. Gently reheat in a microwave or on the stovetop before serving.
