  • 1/2 cup Butter melted, unsalted
  • 3 tbsp Honey organic
  • 1/2 cup Carrot finely grated
  • 1 Banana mashed (about 2 medium)
  • 2-4 tbsp Milk as needed, or milk alternative

Prepare the Dry Ingredients

  • Combine quick-cooking oats, cinnamon, ginger, and dark chocolate chips in a large bowl. Set aside.

Prepare the Wet Ingredients

  • Melt the unsalted butter using a double boiler or in the microwave. Let it cool slightly.
  • In a separate bowl, mash the bananas thoroughly. Add the grated carrot, honey, and cooled melted butter to the mashed bananas. Mix well.

Combine Wet and Dry Ingredients

  • Gradually add the dry oat mixture to the wet banana mixture, stirring until well combined. If the mixture is too dry, add milk, a tablespoon at a time, until you reach a consistency that holds its shape but isn't overly wet.

Bake the Bars

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Spread the oat mixture evenly onto the prepared baking sheet. Press down firmly to create an even layer.
  • Bake for 25-30 minutes, or until golden brown and set. Check for doneness at 25 minutes.

Cool and Cut

  • Remove the baking sheet from the oven and let the bars cool completely on the baking sheet before cutting. Once cooled, cut into desired shapes (bars or hearts) using a sharp knife or cookie cutter.

Serve and Enjoy

  • Serve the bars as is or drizzle with melted chocolate (optional). Store in an airtight container at room temperature for up to 3 days.
