For the Pav

  • 6 pieces Pav Rolls cut into 1-inch pieces

  • 5 pieces Cherries maraschino cherries or fresh

Instructions
 

Prepare the Nuts and Pav

  • Heat 1 tablespoon of clarified butter in a deep wok or pan over medium-low heat. Add the sliced almonds and cashews. Fry for 1-2 minutes until lightly golden. Remove and set aside for garnishing.
  • In the same pan, add the remaining clarified butter. Deep fry the pav pieces until golden brown and crispy. Remove and set aside.

Make the Halwa Base

  • Add the crushed green cardamom pods to the pan and sauté for about 30 seconds until fragrant.
  • Pour in the milk and bring to a boil. Stir in the sugar and continue to cook until the sugar is completely dissolved.
  • Add the orange food coloring (if using) and stir well. Simmer for a few minutes to allow the flavors to meld.

Combine and Finish

  • Add the fried pav pieces to the milk mixture. Gently stir to coat the pav evenly. Continue to cook until the pav absorbs most of the milk, stirring occasionally to prevent sticking. Mash the pav slightly with a spoon or spatula for a creamy texture.
  • Remove from heat. Stir in the fried nuts.

Serve

  • Serve the Pav Ka Halwa warm or at room temperature. Garnish generously with the fried almonds, cashews, and cherries.
