Ingredients
Sweet Potato Preparation
- 2 Potatoes about 1 pound each, large, sweet
Halwa Ingredients
- 1/2 cup Sugar adjust to taste; you may need more or less depending on the sweetness of your sweet potatoes., granulated
- 1/4 cup Ghee
- 1/2 cup Nuts cashews, chopped; such as almonds, mixed, pistachios
- 1 tsp Cardamom Powder ground; also known as elaichi
- 2 tbsp Water for pressure cooking
Instructions
Prepare the Sweet Potatoes
- Pressure cook the sweet potatoes with 2 tablespoons of water for 8-10 minutes, or until tender.
- Let them cool slightly, then peel and mash thoroughly using a fork or potato masher.
Make the Halwa
- Heat the desi ghee in a heavy-bottomed pan or kadhai over medium heat.
- Add the mashed sweet potatoes and cook, stirring frequently, for about 8-10 minutes, or until the ghee starts to separate and the mixture becomes fragrant.
- Stir in the sugar and cardamom powder, and continue to cook for another 2-3 minutes, or until the sugar dissolves and the halwa thickens slightly.
- Add the chopped nuts and mix well.
Serve
- Remove from heat and transfer the halwa to a serving bowl.
- Garnish with extra chopped nuts, if desired.
- Serve warm or at room temperature.
