Ingredients
 

For the Halwa

  • 500 gm Carrots finely grated
  • 150 gm Sugar or to taste; granulated sugar or powdered sugar
  • 1 cup Milk Powder full-fat recommended
  • 1/2 cup Milk whole milk preferred
  • 4 tbsp Ghee clarified butter
  • 1 tsp Cardamom Powder freshly ground is best

Preparation

  • Wash and finely grate the carrots.

Cooking the Carrots

  • Heat the milk in a heavy-bottomed pan. Once boiling, add the grated carrots and cook over low heat for about 30-35 minutes, stirring occasionally to prevent sticking.

Adding Sugar and Milk Powder

  • Stir in the sugar and continue cooking until the sugar dissolves completely and most of the liquid is absorbed. Then add milk powder, stirring constantly to avoid lumps.

Incorporating Ghee and Nuts

  • Add the ghee and cook for another 2-3 minutes, stirring constantly. Stir in the cardamom powder and chopped nuts. Continue cooking and stirring until the halwa starts to thicken and leave the sides of the pan.

Finishing Touches

  • If there are any lumps of milk powder, gently mash them with a spatula.

Serving

  • Transfer the halwa to a serving dish. Garnish generously with whole cashews. Serve warm or at room temperature.
