Ingredients
Vegetables
- 1 medium Bell Peppers chopped, red
- 1 medium Bell Peppers chopped, yellow
- 1 medium Bell Peppers chopped, green
- 1 cup Broccoli
- 1 medium Onion finely diced
- 2 Chili finely chopped, green
Spices & Aromatics
- 2 clove Garlic minced
- 1 tsp Ginger minced
- 1.5 tsp Salt or to taste
- 0.5 tsp Chili Powder red
- 0.5 tsp Turmeric Powder
- 0.5 tsp Coriander Powder
- 0.5 tsp Garam Masala
Other Ingredients
- 250 gm Cottage Cheese indian cottage cheese, cubed
- 2 medium Tomatoes chopped
- 2 tbsp Vegetable Oil
- 1 tbsp Tomato Ketchup
- 1 pinch Sugar
- 0.5 cup Coconut Milk
- 2 tbsp Yogurt plain
- 1 tbsp Coriander chopped, for garnish
Instructions
Sauté Aromatics
- Heat oil in a pan or wok over medium heat. Add minced garlic and ginger; sauté until fragrant (about 30 seconds).
- Add finely diced onions and sauté until softened and translucent (about 5 minutes).
Stir-Fry Vegetables
- Add bell peppers and broccoli; stir-fry for 5-7 minutes until slightly tender-crisp.
Add Spices and Tomatoes
- Add green chilies, salt, red chili powder, turmeric powder, coriander powder, and garam masala. Stir well to combine and cook for 1 minute.
- Add chopped tomatoes and tomato ketchup. Cook for another 2-3 minutes until tomatoes soften slightly.
Incorporate Yogurt and Coconut Milk
- Stir in yogurt and cook for 1 minute, allowing the yogurt to slightly thicken the sauce. Add coconut milk and sugar; simmer for 5 minutes, allowing the flavors to meld.
Add Paneer and Finish
- Add paneer cubes; gently stir to coat with the sauce. Cook for another 2-3 minutes, or until heated through. Be careful not to overcook the paneer.
Garnish and Serve
- Garnish with fresh coriander leaves and serve hot with naan or rice.
