  • Soak cashews and sesame seeds separately in 1/2 cup of water for 40 minutes to soften them. This helps create a smooth paste.
  • Cut the paneer into four equal portions.
  • Drain the cashews and sesame seeds and grind them into a smooth paste in a mixer or food processor.
  • In the mixer, combine the ginger-garlic paste, chopped green chili, cilantro, salt, red chili powder, and olive oil. Grind until well combined.
  • Transfer the mixture to a bowl. Add the Greek yogurt and mix well.
  • Add the paneer fingers to the marinade and coat them thoroughly. Spread the remaining 1/2 cup of sesame seeds on a plate. Coat the marinated paneer pieces evenly with the sesame seeds.
  • Heat the oil in a pan over medium heat. Shallow fry the paneer until golden brown and slightly crispy on all sides.
  • Heat olive oil in a pan or wok over medium-high heat. Add the ginger-garlic paste and green chilies. Sauté for about 30 seconds until fragrant.
  • Add the diced onion and sauté for 1-2 minutes until softened.
  • Add the assorted vegetables, starting with those that take longer to cook, such as broccoli. Stir-fry for 2-3 minutes.
  • Add the cabbage and continue to stir-fry. Season with salt, black pepper, and tomato sauce. Cook for another 2 minutes, or until the vegetables are tender-crisp.
  • Arrange salad leaves on a serving plate. Place the sesame-crusted paneer on top. For an elegant presentation, use skewers to serve the paneer. Serve hot with the stir-fried vegetables and your favorite chutney.
