- 1 Onion finely chopped

- 4.5 ounce Baby Corn finely chopped
- 1/2 tsp Salt or to taste
- 1/4 tsp Chili Powder or to taste
- 1 tsp Italian Herbs basil, dried, mixed herbs, such as oregano, thyme
For the Bruschetta:
- 4 slices Bread about 1/2 inch thick, white or brown bread
- 1 tbsp Olive Oil or regular olive oil, sun-dried tomato infused
- 2 tbsp Lemon Marmalade or any tangy marmalade
- 1/4 cup Cheddar Cheese grated, or your favorite cheese
- 1/4 tsp Paprika for garnish
Instructions
Prepare the Stir-Fried Vegetables
- Heat olive oil in a pan over medium heat. Add onion, mushrooms, and baby corn. Sauté until vegetables are tender-crisp, about 5-7 minutes.
- Season with salt and chili powder. Stir in the Italian herbs.
- Remove from heat and set aside to cool.
Prepare the Bruschetta
