Ingredients
Dry Ingredients
- 1/3 cup Sattu
- 1/3 cup Gram Flour gram flour
- 1/2 cup Coconut Sugar or jaggery
- 1 1/2 tsp Salt or to taste
- 1/4 tsp Cardamom powder
- 2 Tbsp Almonds slivered
- 1 Tbsp Pistachios coarsely chopped
- 2 Tbsp Chia Seeds roasted
Wet Ingredients
- 3/4 cup Milk
- 1/4 cup Clarified Butter
Instructions
- Lightly grease a square baking dish or tray. Set aside.
- In a wok or large skillet, melt the ghee over medium heat.
- Add the besan and sattu to the melted ghee. Sauté over low heat, stirring constantly, until lightly golden brown and fragrant. This toasting process deepens the nutty flavor of the flours.
- Add the coconut sugar (or jaggery). Stir continuously for about a minute until it melts slightly.
- Gradually pour in the milk while stirring continuously. This prevents lumps from forming. Continue stirring until the mixture thickens and comes together.
- Stir in the roasted chia seeds, salt, and cardamom powder. Cook and stir until the mixture starts to pull away from the sides of the wok, indicating it's ready to set.
- Transfer the mixture to the prepared tray. Sprinkle the chopped pistachios and slivered almonds evenly over the top. Gently press down to create an even surface.
- Let the barfi cool completely at room temperature before cutting into squares. For cleaner cuts, you can chill the barfi in the refrigerator for about 30 minutes before slicing.
