Ingredients
Fenugreek Seeds
- 1 cup Fenugreek Seeds methi dana, soaked overnight

- 2 cup Basmati Rice
- 1.5 tsp Salt or to taste
- 1/4 cup Ghee
Instructions
- In a small saucepan, combine the soaked fenugreek seeds with the soaking water. Bring to a simmer over low heat and cook for 3 minutes to soften the seeds.
- Drain the fenugreek seeds, reserving the cooking water. Set both aside.
- In a pot or Dutch oven, heat the ghee over medium heat. Add the drained fenugreek seeds and sauté until fragrant and lightly pink, about 2-3 minutes.
- Add the chopped green chilies and potatoes to the pot. Sauté for another 2-3 minutes, stirring occasionally, until the potatoes are lightly coated in the ghee.
- Stir in the basmati rice and salt. Add the reserved fenugreek cooking water. If needed, add additional water to ensure the rice is covered by about 1 inch of liquid. This ensures the rice cooks evenly and to a fluffy texture.
- Bring the mixture to a boil, then reduce heat to low, cover tightly, and simmer for 15-20 minutes, or until the rice is cooked through, the potatoes are tender, and the liquid is absorbed.
- Serve the Methi Dana Aloo Khichdi hot, garnished with a dollop of fresh green chutney, if desired.
