Prepare the Methi (Fenugreek) Mixture

  • Heat 1 tablespoon of oil in a pan. Add the chopped green chilies, garlic, and asafoetida. Sauté until the garlic turns light brown. Add the fenugreek leaves and salt. Cook for 5-6 minutes, stirring occasionally, until the leaves wilt.

Prepare the Potato Filling

  • Mash the boiled potatoes well. Add the crumbled paneer, cooked fenugreek mixture, chaat masala, red chili powder, and salt. Mix thoroughly to combine.

Prepare the Dough

  • In a large bowl, combine the flour and salt. Gradually add water and oil, kneading to form a soft, pliable dough. Add more water if needed to achieve the desired consistency. Let the dough rest for at least 15 minutes.

Assemble and Roll the Paratha

  • Take a small lemon-sized portion of the dough and roll it into a 3-inch circle. Place a tablespoon of the potato filling in the center.
  • Bring the edges of the dough together to enclose the filling, pinching to seal. Gently flatten the ball slightly. Roll it out again into a 6-7 inch circle.

Cook the Paratha

  • Heat a lightly oiled griddle or tawa over medium heat. Place the rolled paratha on the hot griddle. Cook for approximately 1 minute per side, or until light brown spots appear. Apply a little oil to both sides and cook for another minute per side until golden brown and cooked through.
