Ingredients
 

Vegetables

  • 1 large Potato peeled and diced into 1-inch cubes
  • 1 medium Onion finely chopped
  • 2 Chili finely chopped (adjust to taste), green
  • 2 cup Fenugreek Leaves methi, fresh, roughly chopped, stems removed
  • 1 cup Dill Leaves fresh, washed and chopped

Spices & Aromatics

  • 5 tbsp Oil vegetable or canola oil
  • 1.5 tsp Salt or to taste

Instructions
 

Sauté Aromatics

  • Heat oil in a wok or large pan over medium heat. Add minced garlic and sauté until lightly browned.

Add Onions and Spices

  • Add the chopped onion and green chilies. Sauté until the onions become translucent, about 5 minutes.

Incorporate Potatoes and Herbs

  • Add the diced potatoes, turmeric powder, red chili powder, and garam masala (if using). Stir well to coat the potatoes with the spices. Add the chopped dill and fenugreek leaves. Mix gently.

Simmer and Finish

  • Cover the pan and let it simmer for 5-7 minutes, or until the potatoes are slightly softened. Add salt and mix well. Continue to cook uncovered, stirring occasionally, until most of the liquid has evaporated and the sabzi is slightly dry.

Serve

  • Serve hot with roti, naan, or rice.
