Ingredients
For the Kulfi Base
- 250 ml Milk condensed
- 250 ml Cream heavy cream can be used as a substitute. if using store-bought whipped cream, ensure it's well-chilled., whipped
- 1 cup Milk Powder use full-fat milk powder such as amulya or nestle for a richer flavor and creamier texture.
- 3 tbsp Honey
- 200 gm Ginger fresh ginger root. grate and juice.
- 1/2 cup Almonds blanched almonds, ground with skins on.
- 1/4 tsp Cardamom Powder also known as elaichi powder
For Garnishing
- Pistachios finely chopped or powdered pistachios for garnish., as needed
- Kulfi Sticks wooden or plastic sticks for easy serving., as needed
Instructions
Prepare the Ginger Juice
- Grate 200g fresh ginger. Use a fine-mesh sieve to extract the juice, ensuring you don't add any water.
Combine Ingredients
- In a large bowl, combine the condensed milk, whipped cream, milk powder, honey, ginger juice, ground almonds, and cardamom powder.
Blend the Mixture
- Use a hand blender to thoroughly mix all ingredients until you achieve a completely smooth and homogenous mixture.
Freeze the Kulfi
- Pour the mixture into kulfi molds. Insert kulfi sticks halfway into each mold.
Freeze until Solid
- Place the molds in the freezer for at least 6-8 hours, or preferably overnight, until the kulfi is completely frozen and solid.
Garnish and Serve
- Once frozen, run the molds under warm water for a few seconds to loosen the kulfi. Garnish with chopped or powdered pistachios before serving.
