  • 1 ½ cups cup Medjool Date pitted; you can also use date paste for easier processing
  • 2-4 tbsp Honey or maple syrup, to taste; adjust depending on date sweetness

Prepare the Nuts and Seeds

  • Dry roast the poppy seeds and sesame seeds in a dry pan over medium heat for 2-3 minutes, or until fragrant. Set aside to cool.

Combine Ingredients

  • In a food processor, combine the pitted dates (or date paste). Process until a sticky paste forms. Add the chopped nuts, roasted seeds, honey (or maple syrup), vanilla extract and salt. Process until well combined but still slightly chunky.

Shape and Chill

  • Line an 8x8 inch baking dish with parchment paper, leaving an overhang on the sides. Transfer the nut mixture to the prepared dish. Press firmly and evenly into the dish to create an even layer.

Refrigerate and Cut

  • Refrigerate for at least 2 hours, or until firm. Once firm, lift the bars out of the dish using the parchment paper overhang. Cut into desired sized bars.

Serve and Enjoy

  • Store in an airtight container in the refrigerator for up to a week.
