Ingredients
Dry Ingredients
- 2 cup Rolled Oats
- ½ cup Cranberries dried
- ½ cup Pistachios
- ½ cup Coconut Flakes dried
- ½ cup Coconut Sugar
Wet Ingredients
- ½ cup Honey
- ½ cup Virgin Coconut Oil
- ½ cup Cocoa Powder i used kalya premium cocoa powder
Topping & Garnish
- 2 tbsp Chocolate Chips dark
- ¼ cup Pistachios reserved for topping, chopped
- ¼ cup Cranberries reserved for topping, chopped, dried
Instructions
- Preheat your oven to 340°F (170°C). Lightly grease a baking tray.
- Finely chop the dried cranberries and pistachios. Reserve ¼ cup of each for topping.
- In a large mixing bowl, combine the rolled oats, coconut sugar, coconut flakes, chopped pistachios, and chopped cranberries.
- Melt half of the coconut oil and add it to the dry ingredients. Mix well to ensure everything is evenly coated.
- Spread the oat mixture onto the prepared baking tray. Bake for 10 minutes, or until golden brown and fragrant, stirring halfway through.
- While the oat mixture is baking, prepare the chocolate coating. In a small pan, melt the remaining coconut oil over low heat.
- Remove the pan from the heat and whisk in the cocoa powder until smooth. Stir in the honey until well combined.
- Remove the toasted oat mixture from the oven and transfer it back to the mixing bowl. Pour the chocolate mixture over the oats and mix thoroughly to coat.
- Line a baking tray or dish (approximately 8x8 inches) with parchment paper. Transfer the combined mixture to the lined tray and spread it evenly.
- Sprinkle the reserved chopped pistachios, cranberries, and dark chocolate chips over the top. Gently press down to adhere the toppings.
- Refrigerate for at least 1 hour, or until firm. Cut into bars or break into irregular chunks. Store in an airtight container in the refrigerator for up to a week.
