Instructions
Prepare the Strawberry Puree
- Puree the hulled and sliced strawberries with granulated sugar in a blender or food processor until completely smooth. For a smoother mousse, strain the puree through a fine-mesh sieve to remove seeds.
Whip the Egg Whites and Cream
- In a clean, grease-free bowl, beat the egg whites with an electric mixer until stiff, glossy peaks form. In a separate bowl, beat the heavy cream with vanilla extract and powdered sugar (if using) until soft peaks form. Be careful not to overwhip.
Combine and Chill
- Gently fold the whipped cream into the strawberry puree. Then, carefully fold in the whipped egg whites in two additions, being sure not to deflate the mixture. Do this gently using a spatula or spoon.
Serve
- Pour the mousse into individual serving glasses or a large bowl. Cover and chill in the refrigerator for at least 4-5 hours, or preferably overnight, to allow the flavors to meld and the mousse to set completely. Serve chilled.
