- Soak the moong dal in plenty of water for at least 4-6 hours. Blanch the almonds by soaking them in hot water for 5-10 minutes; peel and slice them. Slice the pistachios.
Make the Sugar Syrup
- Combine 1 cup of sugar and 1 cup of water in a saucepan. Heat over medium heat, stirring until the sugar dissolves completely. Continue to simmer until a one-string consistency is reached (a thin thread forms when you lift the spoon and let the syrup drop back into the pan).
Infuse Saffron
- In a small bowl, steep the saffron strands in 1 tablespoon of warm water for 10-15 minutes to release its color and flavor.
Cook the Moong Dal
- Grind the soaked moong dal coarsely using a food processor or blender with just 1/2 cup water. Heat the ghee in a non-stick pan over low heat. Add the ground moong dal and cook, stirring continuously for 35-40 minutes, or until it turns a light golden brown. Reduce heat as needed to prevent burning.
Combine and Finish
- Stir in the sugar syrup and saffron mixture into the cooked moong dal. Mix well to combine. Add the grated khoya and cook, stirring constantly, until it is completely incorporated and melted. Remove from heat.
