  • 1 tbsp Coriander finely chopped (cilantro)

Instructions
 

Prepare the Batter

  • Combine semolina, grated potato, chopped onion, green chilies, coriander, cumin seeds, red chili powder, and salt in a large bowl.
  • Gradually add water while mixing until a smooth, pourable batter forms. The batter should be slightly thicker than pancake batter.
  • Let the batter rest for at least 30 minutes. This allows the flavors to meld and the semolina to soften. For best results, prepare the batter the night before and refrigerate overnight.

Cook the Chila

  • Heat a non-stick pan or griddle over medium heat. Lightly grease the pan with oil.
  • Pour 1-2 tablespoons of batter onto the hot pan, depending on desired size.
  • Spread the batter into a thin, round circle using the back of a spoon.
  • Cook for 2-3 minutes per side, or until golden brown and cooked through. Add a few drops of oil around the edges to prevent sticking.
