Ingredients
For the Methi Papri:
- 1/2 cup Fenugreek Leaves chopped
- 1/2 cup Whole Wheat Flour whole
- Oil for greasing and shallow frying
- Salt to taste
For the Curry:
- 1 tsp Garlic chopped
- 1 tsp Ginger chopped
- 1 Tbsp Onion chopped
- 1 Tbsp Tomato chopped
- 1 tsp Coriander Powder
- 1 tsp Cumin Powder
- 1 tsp Chili Powder
- 1/2 tsp Caraway Seeds
- 1/2 tsp Paprika smoked
- 1/2 tsp Sesame Seeds white
- Water as needed
Instructions
- In a mixing bowl, combine the chopped fenugreek leaves and whole wheat flour.
- Gradually add water and knead to form a soft dough. This will form the base of the methi papri.
- Lightly grease a rolling surface with oil and roll out the dough into a thin sheet.
- Cut the rolled-out dough into small squares.
- Bring a pot of salted water to a boil. Add the papri squares to the boiling water. The salt helps to season the papri and enhance their flavor.
- Boil the papri for about a minute, or until they float to the surface. This parboiling step helps to soften the papri and ensures they cook evenly when fried.
- Remove the parboiled papri from the water and spread them on a plate to dry slightly. This prevents them from becoming soggy when fried.
- Heat a small amount of oil in a pan over medium heat. Shallow fry the papri until they are golden brown and crispy. This adds a wonderful texture to the dish.
- Set the fried papri aside.
- In the same pan, add a bit more oil. Add the caraway seeds and sauté until fragrant. This blooms the spices and adds depth of flavor.
- Add the chopped garlic, ginger, onion, and tomato. Sauté until the onion becomes translucent and the tomato softens.
- Add the cumin powder, coriander powder, and chili powder. Sauté for a minute to toast the spices, further enhancing their flavor.
- Add water to create the desired curry consistency. Bring the curry to a simmer.
- Add the fried papri to the simmering curry. Allow the papri to simmer in the curry for about 5 minutes, absorbing the flavors.
- Just before serving, sprinkle the smoked paprika and white sesame seeds over the curry. This adds a final touch of flavor and visual appeal.
