- 4 medium Tomatoes chopped

- 1 ½ cup Corn Kernels fresh, frozen, or canned
- 15 Cashews
- 1 cup Milk
- 2 Tbsp Heavy Cream optional
- ¼ tsp Cardamom elaichi, ground
- ⅓ tsp Turmeric Powder haldi
- ¾ tsp Chili Powder red
- ½ tsp Sugar
- ½ tsp Garam Masala
- 2 Tbsp Oil
- 2 Tbsp Butter
Instructions
- Remove the tender fenugreek leaves from the thick stems and chop them.
- Sprinkle the chopped fenugreek with 1 teaspoon of salt, cover, and set aside for 10 minutes. This helps to reduce bitterness.
- Squeeze out any excess moisture from the fenugreek and rinse thoroughly under fresh water.
- Pressure cook the corn kernels with 1 cup of water for 3 whistles. Alternatively, boil until tender. Drain and set aside.
- Soak the cashews in 3 tablespoons of milk for 15 minutes, or microwave for 1 minute to soften. Then, grind into a smooth paste.
- Pressure cook the chopped tomatoes for 1 whistle, or until softened. Do not add water. Blend into a smooth puree.
- In a pan or pot, heat the oil and 1 tablespoon of butter over medium heat.
- Add the ground cardamom. Sauté briefly until fragrant.
- Add the chopped fenugreek leaves and sauté for 1 minute until wilted.
- Add the tomato puree, salt, red chili powder, and turmeric powder. Cook, stirring occasionally, until the oil begins to separate from the masala (spice mixture).
- Stir in the cashew paste and cook for 1 minute. Simmer for 2-3 minutes to allow the flavors to meld.
- Add the cream (if using) and mix well.
- Add the cooked corn kernels, sugar, and garam masala. Stir to combine.
- Cover the pan and cook for 1 minute over low heat to warm through. Serve hot with naan, roti, paratha, or steamed rice.

- If fresh methi (fenugreek leaves) isn't available, use 4 tablespoons of kasoori methi (dried fenugreek leaves). Soak the dried leaves in water for 10 minutes, discard the water, rinse again, and add them to the recipe instead of fresh methi.
- You can use cream instead of mawa (sweetened condensed milk), or omit both.
- For a milder bitterness, blanch fresh fenugreek leaves in boiling water for 1-2 minutes, then drain and squeeze out excess water before adding them to the curry. This also helps preserve their vibrant green color.
