Ingredients
Chicken & Marinade
- 2-3 large Chicken Breasts about 500g total weight, cleaned and thoroughly patted dry, pounded to even thickness
- 2 tbsp Butter room temperature, unsalted
- 1 tbsp Virgin Olive Oil extra
- 4 clove Garlic minced
- 3 tbsp Za'Atar spice blend
- 0.5 tbsp Sumac Powder
- 2 tsp Rosemary dried; or 1 1/2 tbsp finely chopped fresh rosemary
- 1 tsp Salt or to taste
- 0.25 tsp Cumin ground
- 0.5 tsp Pepper black, freshly ground
- 2 tsp Chili Flakes red
- 1 Lemon juice of 1/2 lemon, or zest of 1/2 lemon
Grilled Grapes
- 250 gm Grapes muscato grapes preferred, but any seedless red grape variety works, red, seedless
- 2 tbsp Virgin Olive Oil extra
- 1 tbsp Balsamic Vinegar
- 0.5 tsp Sea Salt
- 1 tbsp Mint Leaves finely chopped, fresh
Instructions
Prepare the Chicken and Grapes
- Pat the chicken breasts dry with paper towels. In a bowl, combine the butter, olive oil, minced garlic, za'atar, sumac, rosemary, salt, cumin, pepper, and red chili flakes. Mix well. Rub the marinade all over the chicken breasts, ensuring they are evenly coated. Let marinate for 20-30 minutes.
Prepare the Grapes
- Rinse and dry the grapes thoroughly. In a separate bowl, toss the grapes with olive oil, balsamic vinegar, salt, and chopped mint.
Grill the Chicken and Grapes
- Preheat oven to 425°F (220°C). Heat a large oven-safe skillet over medium-high heat. Add a little extra olive oil to the pan. Once hot, carefully place the marinated chicken breasts in the skillet, ensuring they sizzle. Add lemon wedges and rosemary sprigs around the chicken. Surround the chicken with the prepared grapes, ensuring the pan juices and mint are incorporated.
Bake and Rest
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the juices run clear when pierced with a fork. Remove from oven and let rest for 10-15 minutes before serving. Garnish with extra za'atar, lemon wedges, and rosemary sprigs. Serve the chicken with the grapes and pan juices.
