Instructions

Prepare the Mango Sauce

  • Combine diced mangoes, water, and oil in a nonstick pan. Cook over medium heat until mangoes are soft and glossy, about 5-7 minutes, stirring occasionally.

Mash the Mango Mixture

  • Remove from heat and use a potato masher or fork to mash the mango mixture until it reaches a smooth, saucy consistency. Transfer to a bowl and refrigerate for at least 10 minutes to chill.

Make the Caramel Syrup

  • In a separate nonstick pan, combine sugar, water, and oil. Cook over medium heat, swirling the pan occasionally, until the sugar melts and turns a light amber color, about 5-7 minutes. Be careful not to burn the sugar.

Assemble the Dessert

  • In a large bowl, combine the cooked spaghetti and caramel syrup, tossing gently to coat. Pour the chilled mango sauce over the spaghetti, gently tossing to combine. Garnish with additional fresh mango dices.

Chill and Serve

  • Refrigerate for at least 15 minutes to allow the flavors to meld and the dessert to chill completely. Serve chilled and enjoy!

Recipe Notes

Expert Tips for the Best Mango Spaghetti Dessert

  • For a richer caramel flavor, add a pinch of sea salt to the caramel syrup while it's cooking.
  • If your mangoes are not very sweet, add 1-2 tablespoons of honey or maple syrup to the mango sauce for extra sweetness.
  • For a more intense mango flavor, use a mango puree instead of fresh diced mangoes for the sauce.
  • Feel free to experiment with other fruits! Pineapple or passion fruit could be delicious substitutes or additions to the mango sauce.
