Instructions

Prepare the Sugar Syrup

  • Combine sugar and 1/4 cup of water in a small saucepan. Heat over medium heat, stirring until the sugar dissolves completely. Bring to a simmer and cook, without stirring, until a light syrup forms (about 2-3 minutes).

Combine Ingredients

  • Reduce heat to low. Add the milk and mango pulp to the syrup. Stir continuously until the mixture thickens to a creamy consistency. This will take approximately 10-15 minutes.

Add Flavorings

  • Stir in the cardamom powder and rose water (if using). Continue to stir for another 2-3 minutes to ensure everything is well combined and heated through. The mixture should coat the back of a spoon.

Cool and Serve

  • Remove from heat and let the Mango Gulab Sakri cool completely. Once cooled, transfer to individual serving bowls. Garnish with chopped pistachios, if desired, and serve chilled.

Expert Tips for the Best Mango Gulab Sakri

  • For a richer flavor, use a combination of whole milk and evaporated milk.
  • Adjust the amount of sugar based on your preference and the sweetness of the mangoes.
  • If you don't have fresh cardamom, you can use store-bought ground cardamom, but freshly ground will have a more intense flavor.
  • Chill the Mango Gulab Sakri thoroughly before serving for the best taste and texture. Serving it slightly frozen is also delicious!
