Ingredients
For the Coconut Pudding "Eggs"
- 0.5 cup Coconut Milk
- 1 pinch Cardamom
- 2 drops Vanilla Extract
- 2 tsp Sugar
- 0.5 tsp Gelatin Powder
- 1 cup Milk
- 0.25 cup Sugar brown
For the Crispy Spaghetti "Nest"
For the Grape "Gel"
- 0.5 cup Grapes black, for gel
- 0.5 cup Sugar powdered
- 2 drops Vanilla Extract
- 1 pinch Cardamom
- 0.25 tsp Gelatin
For the "Soil"
- 10 Oreo Biscuits crushed, for dark soil
- 10 Plain Biscuits crushed, for light soil
For the "Snow"
- 1 cup Desiccated Coconut
- 0.75 cup Sugar
- 1 pinch Cinnamon ground
For the "Tree Logs"
- 4 Chocolate Sticks pirouline, e.g.
For the Garnish & Assembly
- 10 Grapes black, frozen
- 1 Edible Flower optional, pink
- 0.5 cup Sugar for crystals
- 1 pinch Food Coloring green
- 1 pinch Food Coloring yellow
Instructions
- In a saucepan, combine the coconut milk and gelatin powder. Stir until the gelatin dissolves completely. Set aside.
- In a separate saucepan, combine the milk, cardamom, vanilla extract, sugar, and brown sugar. Heat over low, stirring constantly, until the sugar dissolves. Do not boil.
- Pour the coconut milk mixture into the milk mixture. Stir continuously for 4-5 minutes. Remove from heat and let cool to room temperature.
- Cook the spaghetti according to package directions with 1.5 tsp salt. Adding salt to the pasta water seasons the spaghetti throughout. Add 1 tbsp of oil to the boiling pasta to prevent sticking. Drain the spaghetti.
- Heat 1 tbsp of oil in a frying pan. Shape the cooked spaghetti into a nest form. Carefully place the spaghetti nest in the hot oil and fry until light golden brown. Set aside.
- In a saucepan, gently heat the black grapes over low heat. Once heated, add the powdered sugar and stir until dissolved.
- Add the vanilla extract, cardamom, and gelatin. Stir over low heat for 5-6 minutes, or until slightly reduced.
- In a bowl, combine the desiccated coconut, cinnamon, cardamom, and sugar. Mix well and freeze overnight.
- Once frozen, blend the coconut mixture into a fine powder, creating a snowy texture.
- Fill the chocolate sticks with the prepared grape gel. Freeze overnight to set.
- In a saucepan, heat the sugar with a little water over medium heat. Stir constantly until the sugar dissolves and begins to caramelize. Watch carefully to prevent burning.
- Divide the caramelized sugar and add food coloring to each portion. Pour onto parchment paper and let cool completely.
- Place the crushed Oreo biscuits in the center of a plate to create the "soil." Place the fried spaghetti nest on top.
- Carefully spoon the coconut pudding "eggs" into the nest. Arrange crushed plain biscuits around the nest for additional "soil." Sprinkle with sugar crystals.
- Garnish with frozen grapes and the chocolate "logs." Add a pink edible flower for a final touch, if desired.
