Instructions

Prepare the Milk Mixture

  • Combine the whole milk and heavy cream in a heavy-bottomed saucepan. Simmer over low heat, stirring occasionally, until the mixture reduces by half. This will take approximately 45-60 minutes. The consistency should be thick and creamy.

Infuse with Saffron and Sugar

  • Stir in the sugar and the saffron strands (soaked in warm milk). Continue to simmer for another 5-7 minutes, allowing the flavors to meld.

Overnight Infusion

  • Remove from heat and strain the mixture through a fine-mesh sieve. Pour the strained mixture into a shallow, wide-mouth container and cover loosely with cheesecloth. Allow it to rest overnight in a cool, dry place (avoid refrigeration) to further develop its texture and flavor. Dew is not necessary, this step allows further thickening.

Churning and Separation

  • In the morning, use a whisk or a wooden spoon to gently whip the cream until it becomes frothy. Separate the thick, creamy froth from the remaining liquid. The froth is your Malaiyo.

Garnish and Serve

  • Garnish the Malaiyo generously with the slivered almonds, chopped pistachios, and edible silver leaf. Serve immediately to enjoy the full effect of its creamy texture and subtle sweetness.

Recipe Notes

Expert Tips for Perfect Malaiyo

  • Use the highest quality ingredients for the best results. The richness of the milk and cream is key.
  • Patience is crucial. The slow reduction of the milk and the overnight resting period are essential for achieving the perfect texture.
  • Don't over-whip the cream. Gentle whisking is key to separating the froth without incorporating too much air.
  • Serve immediately for the most delightful experience. The Malaiyo will begin to lose its airy texture as it sits.
