Instructions

Prepare the Hung Yogurt

  • Place the yogurt in a muslin cloth or fine-mesh sieve lined with cheesecloth. Hang it over a bowl or sink for 2-3 hours, or until most of the whey has drained, leaving a thick, creamy yogurt.

Prepare the Biscuit Crumble

  • Grind the digestive biscuits into fine crumbs using a food processor or blender.

Make the Yogurt Mixture

  • In a bowl, whisk together the hung yogurt, vanilla extract, and honey until smooth and creamy.

Assemble the Parfaits

  • In individual glasses or jars, layer the ingredients as follows: Start with a layer of mixed nuts and figs, followed by a layer of the yogurt mixture, then a layer of biscuit crumbs, and finally a layer of diced mangoes. Repeat the layers, ending with a topping of nuts and figs.

Chill and Serve

  • Refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled for the best taste.

Recipe Notes

Expert Tips

  • For a richer flavor, use homemade hung yogurt. The longer you hang it, the thicker and creamier it becomes.
  • Adjust the amount of honey to your preference. You can also use maple syrup or another sweetener.
  • Feel free to experiment with other nuts and dried fruits. Cranberries, pecans, or macadamia nuts would all be delicious additions.
  • Garnish with extra fresh mint leaves for a beautiful and refreshing presentation.
