Ingredients
- 1 ltr Milk
- 1 cup Sugar
- 1 cup Water
- 1 tbsp Lemon
- 1 pinch Cardamom Powder elaichi
- 1/2 tsp Custard Powder
Instructions
Prepare the Paneer Cheese Balls
- Heat the milk in a heavy-bottomed pan until it comes to a gentle boil. Reduce heat to low.
- Slowly add lemon juice or vinegar, stirring continuously. The milk will curdle.
- Strain the curdled milk through a cheesecloth-lined sieve. Rinse the curds under cold water to remove any excess lemon juice.
- Squeeze out excess water from the curds. Knead the curds until smooth and pliable. Add a pinch of salt.
- Divide the mixture into small, equal-sized balls. Gently flatten each ball into a thin disc.
Cook the Paneer Balls in Sugar Syrup
- In a pressure cooker, combine sugar and water. Bring to a boil and add the flattened paneer discs.
- Cook for 3 whistles on medium heat, then let the pressure release naturally. Simmer for 10 minutes once the pressure is released.
- Remove the paneer balls from the syrup, and set aside to cool. The paneer should have doubled in size and be soft.
Prepare the Saffron-Infused Milk
- In a heavy-bottomed pan, heat the milk until it comes to a boil, then reduce heat and simmer gently.
- Stir occasionally to prevent burning. Keep simmering until the milk starts to thicken.
- In a small bowl, whisk together the custard powder (or cornstarch) with 2 tablespoons of water until smooth.
- Add the sugar and whisk until dissolved. Add the saffron milk, cardamom powder and sugar into the thickened milk and stir well to combine. Stir continuously to prevent lumps from forming.
- Once the milk is thickened, add the cooked paneer discs to the milk mixture.
- Simmer gently for another 2-3 minutes, then remove from the heat.
- Stir in the soaked saffron threads.
- Refrigerate for at least 2 hours to allow the flavors to meld and the paneer to absorb the creamy milk.
- Serve chilled.
