For the Shrikhand

  • 2 cup Hung Yogurt greek yogurt, thick, hung curd is essential for the best texture. you can make it by lining a muslin cloth-lined sieve with hung curd for several hours to drain excess whey. alternatively, use thick greek yogurt.
  • 1/4 cup Sugar adjust to your sweetness preference. granulated sugar can be used as well., powdered
  • 1/2 tsp Cardamom Powder elaichi powder, freshly ground is best.
  • 1/2 tsp Milk needed to infuse the saffron.
  • 12 strands Saffron Strands

Prepare the Saffron Infusion

  • Firstly, gently crush the saffron strands. In a small bowl, steep the saffron strands in 1/2 teaspoon of warm milk for at least 10-15 minutes to allow the color and flavor to infuse.

Beat the Hung Curd

  • In a large bowl, add the hung curd. Using a hand mixer or whisk, beat the curd until it becomes smooth and creamy. Be careful not to overbeat.

Combine Ingredients

  • Add the powdered sugar and cardamom powder to the beaten curd. Gently fold in the saffron-infused milk, ensuring everything is well combined. Taste and adjust sweetness if needed.

Garnish and Serve

  • Transfer the shrikhand to a serving bowl. Garnish generously with slivered pistachios and a few saffron strands. Serve chilled. Enjoy!
